Avocado Toast

  • 1/2 large avocado

  • 1/2 medium sized lemon

  • 1 tablespoon olive oil

  • 1 radish sliced paper thin

  • Light drizzle of either balsamic vinegar or red wine vinegar (optional)

  • 1 tablespoon nutritional yeast

  • Red pepper (optional)

  • Himalayan salt

  • Ground black pepper

  • Your favorite bread, toasted (I use gluten free)

Let’s get cookin’ ~ good lookin’

In a small bowl, mash avocado and fold in lemon, a dash of salt. Add mixture to the toasted bread & top with sliced radish.

In a separate bowl, combine nutritional yeast, salt, pepper and sprinkle on top of the avocado toast.

Drizzle with olive oil & vinegar (if you are feelin’ it)

Some other fun toppings I love to add: sliced cherry tomatoes, sliced cucumber, and arugula
