Apple Pie Overnight Oats

  • 1/2 apple, chopped

  • 1/3 cup oats

  • 1 tablespoon chia seeds

  • 1/3 tablespoon of coconut oil

  • 1 cup nut milk

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon pure vanilla extract

  • 1/2 medium sized lemon

  • 1 tablespoon maple syrup

  • Himalayan pink salt

Let’s get cookin’ ~ good lookin’

In your favorite jar, add in oats, chia seeds, nut milk, 1/2 tablespoon of pure maple syrup & a sprinkle of salt.

In a small sauce pan, add in coconut oil and let it coat the pan. Add in apples and let simmer for 3-5 minutes or until soft. Next, stir in cinnamon, nutmeg, vanilla & a sprinkle of salt. Let sit on low heat for another 2 minutes and then add in lemon and maple syrup. Stir & leave covered on low heat for 3-5 minutes until apples are fully cooked.

Next, add the warm apple goodness on top of the oat mixture, cover with a lid & let the magic set in while it cools in the fridge overnight. Enjoy!
