Sassy Sweet Potato Hash

  • 2 large sweet potatoes cubed (with the skin) 

  • 2 tbsp avocado oil

  • Crushed red pepper

  • Salt 

  • Pepper

Let’s get cookin’ ~ good lookin’

Preheat oven to 400 degrees F.

Boil a pot of water and add sweet potatoes in for 5 minutes and then drain. 

Pat dry with cloth and add into a large bowl. 

Mix in avocado oil, salt, pepper & red pepper flakes and then place on a lined cookie sheet with space in between each cubed sweet potato. 

Roast for 25-35 minutes or cooked through and lightly browned.

Let it sit for at least 10 minutes before serving. Enjoy!
