Bet On It Chocolate Chip Banana Bread

  • 1 3/4 cup gluten free flour (I love Pamela’s)

  • 1 1/2 cup coconut sugar

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 tablespoon cinnamon

  • Dash of nutmeg

  • 4 tablespoons almond milk

  • 3 tablespoons coconut oil, melted

  • 1/2 teaspoon pure vanilla extract

  • 1/2 teaspoon Himalayan pink salt

  • 1/4 cup walnuts, chopped (optional)

  • 1 cup vegan chocolate chips

Let’s get cookin’ ~ good lookin’

Preheat the oven to 355 degrees F.

In a large bowl, mash bananas until smooth.  Add in almond milk, coconut oil, vanilla & mix through.

In a separate bowl, whisk flour, coconut sugar, baking soda, baking powder, cinnamon, nutmeg & salt until there are no lumps.

Combine the wet & dry ingredients until smooth.  Fold in chocolate chips & walnuts.

Place in a loaf tin & bake for 40-50 minutes or until baked through.  Let sit for 30 minutes or until cool before diving in.
