Talk Cookie to Me

  • 1/2 cup oats

  • 1/2 cup oat flour, blend oats until flour consistency

  • 1 teaspoon baking powder

  • 1/3 cup nut milk

  • 1/2-1/4 cup pure maple syrup (depending on how sweet you’d like your cookies)

  • 1/2 banana

  • 1 chia egg

  • 1/4 cup coconut oil

  • 1 tablespoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon Himalayan pink salt

  • 1/2 cup vegan chocolate chips

  • 1/2 cup cranberries

  • 1/2 cup raisins

  • 1/3 cup raw pepitas

  • 1/4 cup chopped walnuts (optional)

Let’s get cookin’ ~ good lookin’

Preheat oven to 350 degrees F.

Combine oats, oat flour, baking powder, cinnamon, nutmeg, salt

In a blender, add in coconut oil, banana, maple syrup, and nut milk & blend through. Once blended, stir in chia egg.

Combine wet & dry ingredients until fully mixed. 

Add in chocolate chips, cranberries, raisins, pepitas & walnuts and fold until fully integrated.

On a cookie sheet lined with parchment paper, use a spoon to scoop cookie dough into balls and place of sheet.  Leave about 2 inches or more between cookies. 

Bake for 12-15 minutes or until the edges of the cookies are slightly brown. 

Let cool for 10 minutes at least & then enjoy!
