Deconstructed apple crumble

  • 1 apple, chopped

  • 1/4 cup oats

  • 1/4 cup chopped walnuts

  • 1/4 cup rasins

  • 2 tablespoons coconut oil, melted

  • 1/2 tablespoon lemon juice

  • 1 tablespoon maple syrup

  • 2 teaspoons cinnamon

  • 1/2 teaspoon pure vanilla extract

  • Dash of nutmeg

  • Himalayan pink salt

Let’s get cookin’ ~ good lookin’

Preheat oven to 350 degrees F.

In a medium bowl, mix oats, 1 tablespoon coconut oil, 1/2 tablespoon maple syrup, 1 teaspoon cinnamon, vanilla, dash of salt. Spread on a lined baking sheet and bake for 10 minutes or until lightly browned.

In a small pan, add 1 tablespoon coconut oil and apples. Let simmer for 5 minutes. Add in 1 teaspoon cinnamon, nutmeg, raisins, 1/2 tablespoon maple syrup, walnuts, Himalayan pink salt & lemon. Stir through & keep covered on low heat for 5 minutes or until apples are cooked through.

Put apple mixture in a serving bowl and coat with oat topping. My favorite addition is a dollop of vanilla coconut yogurt.
