Butternut Squash Tacos

Ingredients for squash:

  • 1/2 butternut squash cubed

  • 1 tsp coconut oil or avocado oil

  • 1/4 tsp salt

  • 1 tsp chili powder

  • 1/4 tsp cumin powder

  • 1/4 tsp garlic powder

  • Black pepper

  • Paprika (optional)

 

Ingredients for black beans:

  • 15 oz black beans

  • 1/4 tsp salt

  • 1 tsp chili powder

  • 1/4 tsp garlic powder

  • 1 tbsp nutritional yeast

  • 1/4 tsp cumin powder

  • Paprika (optional)

  • Juice of 1/2 of a lime

Toppings to think about:

  • Tortillas of choice

  • Jalapeños 

  • Pico de gallo

  • Shredded cabbage

  • Avocado / guacamole

  • Vegan sour cream

  • Cilantro

  • Lime

  • Salsa

  • Hot sauce

Let’s get cookin’ ~ good lookin’

 

First, preheat oven to 350 degrees Fahrenheit. Next, mix all ingredients for Butternut Squash in a large bowl and then place on top of a lined baking sheet. First, you'll need to cook the butternut squash.  Bake for 30-40 minutes or until soft, tender, and slightly browned.

In a small - medium sized pot, add in 1/2 tbsp of avocado oil and once warm, add in black beans. Stir in the salt, chili powder, garlic powder, cumin powder, and paprika. Cover and let simmer, stirring occasionally. After about 5 minutes, stir in Nutritional Yeast and lime juice and cover on low heat.

Finally, it’s time for your creativity to shine! Layer your favorite ingredients in the form of a taco, bowl, nachos, burrito, etc.
